1. CUCUMBER SALAD
(Y am Thang Kwa)
2 medium-sized cucumbers, peeled, seeded and diced
2 tablespoons finely chopped onion
2 tablespoons slided shallots, cut into 2cm pieces
2 tablespoons dried shirmp, washed and ground
2 tablespoons finely chopped fresh coriander stems and leaves
4 tablespoons fresh mint leaves
2 tablespoons fish sauce
4 tablespoons lemon juice
1 teaspoon sugar
6 large lettuce leaves
GARNISH
3 tablespoons crushed roasted unsalted peanuts
1/2 teaspoon dried chilli flakes, mint and coriander sprigs
Drain diced cucumber on absorbent kitchen paper towels for a few minutes then place in a bowl and combine with onion, shallots, dried shirmp, chopped coriander and mint leaves. Sprinkle with fish sauce, lemon juice and sugar, then toss gently.
Place lettuce leaves on a platter and arrange cucumber salad in a mound on top. Sprinkle with ground peanuts and dried chilli flakes, garnish with mint and coriander sprigs.
